Double Vanilla Bean Homemade Ice Cream

No need for an ice cream maker here. This recipe is easy and quick. All you need is a spoon when it is done.

Double Vanilla Bean Homemade Ice Cream




1 pint heavy whipping cream

1 can sweetened condensed milk (full fat not reduced)

1/4 tsp vanilla extract

1/4 vanilla bean stick




Pour condensed milk into small mixing bowl and add vanilla extract and seeds from vanilla bean. Set mixture aside.


Create a cold bath by placing a smaller mixing bowl inside of larger mixing bowl which is filled with ice water. In smaller mixing bowl add whipping cream and beat with electric beater until the cream doubles and forms soft peaks.  


Gently fold in ½ c condensed milk into cream with large wooden/bamboo spoon. Once all milk is folded into cream transfer mixture to a large 2 quart freezer safe glass container with lid. Place in freezer overnight. Serve and top with favorite toppings.



Fold in ½ cup of diced frozen fruit into condensed milk. Omit vanilla bean.
